Mississippi Mud Pie

From Adena

1/2 c pow sugar
3/4 c butter, softened
1 1/2 c flour

Here you are my friend--


Mississippi Mud Pie
Mix together and press into the bottom of a 9x13 pan.  
Bake at 400 for 10 min or until it starts to brown.  
Pull out of oven and cool crust.

1 c pow sugar
1 c coolwhip
1- 8oz cream cheese pkg, softened ( i actually used 1 1/2 containers)
1 pkg vanilla pudding mix (3.5 oz)
1 pkg chocolate pudding mix (3.5 oz)
2 c milk

Mix next 3 ingredients together (pow sugar, cool whip, cream cheese) 
and pour onto cooled crust. Mix pudding mixes and milk and pour over 
cream cheese layer.  Lastly, spread another layer of cool whip on top to 
cover all the chocolate pudding and refrigerate to harden.  

She also put a mint leaf on top that made it super fancy and just gave it that extra delicious touch.

Relief Society YUMMY dinner menu

Sweet Pork
3-4 pounds pork roast
Cover roast half way with water.  Cook in crockpot for SIX HOURS on low or until it shreds.
Then add:
1 8 oz. bottle taco sauce
1 T cumin
1 c. brown sugar
1 can Dr. Pepper (caffeine free, of course!)
*Mix thoroughly and cook an ADDITIONAL 3 HOURS.
 
Lime Cilantro Rice
In a large pan saute:
2 T butter
1 yellow onion, chopped
4 garlic cloves, minced
 
Add the following and bring to a boil:
6 2/3 c water
8 t chicken bullion
1/2 bunch cilantro
2 t cumin
2 small cans green chilies
1T lime juice
1/2 t pepper

Add 3 cups white rice. Reduce heat, cover and simmer for 30 minutes. (If you use brown rice, adjust water and time.)
***If you have a rice cooker I have sauteed the first three ingredients and then added everything to the rice cooker.
 
Tomatillo Dressing
1 pkg Hiden Valley Ranch Dressing Mix
1 c buttermilk
1 c mayonnaise
1-2 tomatillos
1/2 to 1 clove garlic, minced
1/2 to 1/3 bunch cillantro, chopped
1/2 t lime juice
1/2-1 small jalapeno, seeds removed or it will be too hot.
Puree in blender.
 
Enchilada Sauce
1 small (4 oz) can diced green chiles
1 (7 oz) can salsa verde
1/2 cup chicken broth
2 tsp sugar
1 tsp salt
Combine all ingredients in a small saucepan.  Bring to a boil, then reduce heat to medium-low and let simmer for 20 minutes. Refrigerate after simmering to allow the flavors blend even more.

Black Beans
6 cans black beans (drained and rinsed)
1/4 c olive oil
4 cloves garlic
2 large minced onions
2 minced green peppers
1 t. cumin
2T sugar
Saute garlic, onions and peppers in oil and add spices and beans. Simmer 30 minutes. If too dry add chicken broth.

Delicious Italian Bread Pull apart

WHITE BREAD (Teresa Duffy's Mom's Recipe--My VERSION)
5 c. hot water                           Knead for 7 minutes.  Let rise 30 minutes.  Form into loaves
2/3 c. sugar                              and let rise again until double in greased loaf pans.  (Makes
4 TBSP yeast                            5 loaves).  Bake 350* for 32 minutes.  Don't skip first rise.
2 TBSP salt                                         
2/3 c. oil
1 egg-optional
12-13 c. flour
Parmesan Pull Apart Roll Recipe (from Columbine Ward RS)
After making dough and first rise, tear of ping pong ball size and dip into butter then cheese. Place into well greased bundt pan until  half full. Allow to rise another 30 minutes. Bake at same temp and time as the regular bread recipe. Immediately invert onto a cooling rack. Serve when ready.
Butter mixture: 1/3 C melted butter
                         2 garlic cloves, pressed
                        1/2-1 tsp. black pepper

                        1-2 tsp. flaked parsley

Cheese Mixture:1 1/2 c. freshly shredded parmesan reggiano (or pecorino romano)

Cauliflower & Roasted Cloves of Garlic

I had this at my BBF party before the wedding night.  It was super yummy.

Roasted Cauliflower and Roasted Cloves of Garlic
Servings: 6

1 large cauliflower trimmed and cute into bite size pieces, washed with water
16 garlic cloves, peeled and lightly crushed
1-2 teaspoon minced fresh rosemary
1 teaspoon salt
1/4-1/2 teaspoons black pepper
1/4 cup olive oil, adding more to taste

Directions:
1.  Mix oil, rosemary, salt, pepper, and garlic together
2.  Toss in cauliflower and place in a large casserole dish in one layer
3.  Roast in a preheated oven at 450 degrees for 20 minutes, give a toss and bake for 10 more minutes.
Sprinkle parmesan cheese on it before it goes in and when it comes out.  Yum.

White Chicken Lasagna

1/2  cup butter melted
1/2  cup flour
3/4 teaspoon salt
1/4 teaspoon black pepper
1/2 t. dried basil
3  cups chicken broth
3 cups chicken diced
8 oz. lasagna noodles
2 cups cottage cheese
1 egg slightly beaten
1   10 oz frozen spinach cooked and drained
1/2 lb. of mozzarella thinly sliced
8 oz fresh Parmesan cheese grated

10-12 Servings

Melt butter in a large saucepan and blend in flour, salt, pepper, and basil.  Stir in chicken broth and boil until thickened.  Pull of the stove and add chicken.  Boil and drain noodles.  Mix cottage cheese and egg and put to the side.  Place 1/3 of chicken mixture on the bottom of a 9x13 pan and then layer with half of the noodles, and half of the cottage cheese, spinach, and mozzarella cheese.  Top with the last of the chicken mixture and Parmesan cheese.  

375 degrees for 45 minutes

Great Freezer Meal.  SO SO yummy.  If you do freeze need to defrost before oven.  

Best Oatmeal Cookie

I got this recipe from my friend Trisha.  I ordered some cookies from her son, I think it was for Scouts, but I'm so glad I did, because these are seriously THE best oatmeal cookie.  Just try it, I dare you.  Almost every time I make them I have to send the recipe to them.  One of my husband's co-workers asked once and I forgot or something, she totally got after me again and I made sure she got it this time.  ;)  


CREAM

2 C. Butter
2 C Sugar
2 C Brown Sugar

ADD

4 eggs
4 c flour
5 c quick oats
1 teaspoon salt
2 teaspoon baking powder
2 teaspoon baking soda
2 bags chocolate chips

Cook at 350 for 9 minutes

Hawkins Breakfast Casserole


So, I had to substitue and change things because I didn't have certain things available here, but it was still delicious and the Sister Missionaries loved it.

32 oz. frozen shredded hash brown potatoes
1 c. melted butter
2 c. shredded cheddar cheese
2 c. shredded jack cheese
2 c. diced ham
1 c. canned milk
6 eggs ( well beaten )

Spray 9x13 pan with cooking spray. Pour melted butter over hash browns and bake @ 450 for 25 min.
Layer cheeses and ham over potatoes. Beat eggs and milk together . Pout over all. 
Bake @ 350 for 30 minutes.
Serves 12 - 15
 Enjoy!

(I made fresh hash browns it was around 5 medium potatoes added onion, salt and pepper into the potatoes then baked, didn't use a cup of butter like 3/4, we only have one kind of cheese here and I didn't use as much, 1 cup ham, used regular milk not can, ended up using 7 eggs, and when I added cheese and ham also added mushrooms and peppers.  So yummy.)

Texas Sheet Cake

Family favorite

Bring to a boil:
 1 cup butter
 
1 cup water
1/4 cup cocoa 
Pour over:       
 2 cups flour 
 2 cups sugar
Beat well----------------

Add:
2 beaten eggs, 
1/2 cup sour milk ( add 1 1/2 teaspoon of vinegar to make sour milk), 
1 teaspoon baking soda, and 1 teaspoon vanilla. 

Mix well and bake in 11x 17 pan@ 350 degrees for 20 minutes.
Five minutes before cake is done, make the frosting.

Frosting

Put:
1/2  cup butter, 4 Tablespoons cocoa and 1/3 cup of milk in a pan. Stir and bring it to a boil, remove from stove and add 3 3/4 cups powder sugar and 1teaspoon of vanilla and beat till smooth. Ice cake right out of the oven.

Salmon

Beth gave me this recipe to try.  I think it might be from all recipes.com...
I had the skins still on so I sautéed the top first and then turned them over.  Super yummy.

3/4 pound salmon fillets

lemon pepper to taste

garlic powder to taste

salt to taste

2 tablespoons and 2 teaspoons soy

sauce

2 tablespoons and 2 teaspoons brown

sugar

2 tablespoons and 2 teaspoons water

2 tablespoons vegetable oil

DIRECTIONS:

You have scaled this recipe's ingredients to yield a new amount (3). The directions below still refer to the original recipe yield (6).

1.

Season salmon fillets with lemon pepper, garlic powder, and salt.

2.

In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a largeresealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.

3.

Preheat grill for medium heat.

4.

Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

Flag Cake

Growing up my mom made this cake almost every 4th of July.  I will have to make everything from scratch here in Jyvaskyla, hope it makes me(and my guests) feel at home!  Hopefully, I'll remember to take a picture too.


Flag Cake:

1 pkg. white cake mix
     ( make as directed only bake 15 min. in Texas sheet size pan )

Edith made cake from scratch this year’23.  Subbed 1/3 cup oil with applesauce, 1 cup of wheat flour, almond milk and used almond extract. 

 It was the best I’ve ever had.  Also used zero cool whip for topping it was so good.  


  • 6 Tablespoons unsalted butter softened to room temperature (85g)
  •  cup canola oil or vegetable oil (160ml) [1/3 oil, 1/3 applesauce]
  • 2 cup sugar (400g)
  • 1 Tablespoon clear vanilla extract [added almond extract]
  • 2 ⅔ cup + 2 Tablespoon all-purpose flour(345g) [one cup wheat]
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk room temperature preferred (235ml) [used almond milk]
  • 6 large egg whites room temperature
    • Preheat oven to 350F and prepare two 8-inch round cake pans [used the rectangle for flag] by lining the bottoms with a round of parchment paper and generously greasing and flouring the sides. Be sure to shake out excess flour.
    • In a stand mixer (or using an electric mixer), beat butter on medium-low speed until creamy.
    • Add sugar and oil and beat until all ingredients are well-combined and creamy.
    • Scrape down the sides and bottom of the bowl and then stir in your vanilla extract.
    • In separate bowl, whisk together your flour, baking powder, and salt.
    • Measure out your milk.
    • With mixer on medium speed, gradually alternate between adding the flour mixture and the milk to the butter mixture, starting and ending with the flour mixture. Stir until each one is almost completely combined before adding the next.
    • Pause occasionally to scrape down sides and bottom of bowl.
    • In separate bowl combine your egg whites and using a hand-mixer on high-speed beat until stiff peaks form.
    • Using a spatula, gently fold your egg whites into your batter. Take care to scrape the sides and bottom of the bowl so that ingredients are well-combined, and take care not to over-mix.
    • Evenly divide cake batter into prepared pans.
    • Bake on 350F for 35-40 minutes, or until a toothpick inserted in the center of each cake layer comes out clean or with few crumbs (should not be wet). For best results, rotate your cake pans halfway through baking to ensure even baking.
    • Cakes will be a light golden brown when done baking.
    • Remove cakes from oven and allow to cool for 15 minutes. Run a knife around the inside rim of each pan and invert each onto a cooling rack.

Topping:

1 large vanilla instant pudding  ( mix with 2 cups of milk till thick )
add 8 oz. softened cream cheese ( whip first )
then add 1 pint of whipping cream ( whipped ) or 8 oz. cool whip
May be decorated as the flag with blueberries and strawberries
or with crushed pineapple and slivered almonds
Finnish blueberries stain your hands, but they are delicious!!!






Roberts Cookies

Betty Crocker, but it is known as the Robert's cookie, because these are the only chocolate chip cookie that we had growing up.  It was famous from my brothers making it down to when I have made them.  I hope it isn't copy writing, because it's one that I want to reach anywhere I go.  SO yummy.


1 c. sugar
1 c. packed brown sugar
2/3 c. soft butter
2/3 c. shortening
2 eggs
2 t. vanilla

Mix the above ingredients, then stir  in

3 c. flour
1 t. baking soda
1 t. salt      ( combine dry ingredients first )
1 c. chocolate chips

Bake @ 375 8 to 10 minutes     2 dozen

Pillow

Okay, so I know pillows are way simple, but I'm excited about this inspiration. This was left over material from a baby blanket for a friend. My daughter loves the mink, and she hasn't had a real size pillow, combine the too, and wa la.

Next thing to try with the left overs of the left overs....

I also have made bibs with mink and used a bib to wipe down the counter and they make great clothes for clean up...

Whenever you work with mink, before sewing pull a little tight and pin, or else you will have extra fabric at the end.
