Black Bottom Cupcakes

(from Sister LeDuc made these for our youth after baptisms.  Think chocolate, with a dop of cheesecake.  She used to make these for the girls at girls camp.)

Cream Together:

8 oz. cream cheese--softened

1 egg

1/3 cup sugar

1/8 tsp. salt

Stir in 6 oz pkg or 1 cup of chocolate chips

Set Aside

Cake mixture:

Stir together:

1 1/2 cup flour

1 cup sugar

1/4 cup cocoa

1 tsp. baking soda

1/2 t. salt

Add:  

1 cup water

1/3 cup oil

1 T. vinegar

1 tsp. vanilla

Fill cupcake papers 1/2 full add 1 T. cheese mixture. Drop on top, bake 350 for 30-35 min.
