Vegetable Chowder

 When I was little on vacation in CO, my Aunt Kathy made this vegetable chowder, I remember how delicious it was.

1 T. 1t. Olive oil

2 cups diced zucchini 

1 cup mushrooms, cut quarters

1 cup green beans cut in two pieces

1 cup carrots sliced

1 cup onions diced

1/2 cups celery diced

1 medium bell pepper

2 cups chicken broth

1 cup tomato sauce

2 tsp Worcestershire sauce

1/2 t. Thyme

2 dash hot sauce 

1 cup evaporated skim milk


Heat oil in a large pot.  Add the next seven ingredients, sauté occasionally stirring. Add remaining ingredients except milk. Simmer 40 minutes. Stirring OK occasionally shut off heat stir in  milk.
